The naffness of Hershey

[livejournal.com profile] al_fruitbat(I think) once stated that Hershey's chocolate was rank because it had a higher wax content to allow it to cope with the large temperature variations in the american subcontinent (so you have one recipe that would be consistent from Florida to Alaska).

Just the other day [livejournal.com profile] sbisson attended a lecture on chocolate where a variation on the off milk theory was mentioned which sounds slightly more plausible.
