Usually, it's not the done thing to clap between movements of a concerto or symphony; the break between movements is meant to be quite short. Kind of like the breathless silence on breaks between tracks when a prog band perform a concept album.
Opera, on the other hand,(admittedly in my limited experience) permits one to applaud like a mad thing - on entrances, at the start of arias, at the end of cadenzas, at the end of arias, at the end of scenes, at the end of acts...until your hands fall off. Kind of like an American Cinema Audience.
