Incidentally, there was a bewildering lack of handpumps in bars. Someone told me that Scottish beer works differently - the pumps look electric, but are actually run off mains water pressure. Anyone know if there's any truth in that highly unlikely sounding rumour ?
I believe it's usually air pressure rather than water pressure that drives the pump. Apparently this kind of system has been in use in Scotland for quite a long time.
Cask ale service using an air pump is acceptable to CAMRA because the air doesn't come into contact with the beer - unlike systems which involve using air pressure (or more commonly CO2) to pressurise the cask and drive the beer up the line.
