Have you seen me use anything but granulated (which, granted, you did not have)? Jam sugar is just an excuse to charge more. I'm in the no butter cream and jam brigade, but the same mixture, piped into fingers, with the ends of the cooked biscuits dipped in melted chocolate, that's OK.
